Millennials are making up an ever-greater share of overall consumer spending. With health and wellbeing a major influence on their spending habits, the UK food and beverage sector is undergoing some significant changes in response. Nowhere is this more pronounced than the evolution of coffee shops; while on average a pub shuts down every 12 hours, a new coffee shop opens every eight hours.
